Ingredients
- 1 lb rotini
- 3 or more cups of thinly sliced vegetables such as bell peppers, red onions, celery, cucumbers, hearts of palm, spinach, olives, radish
- 1/4 cup sauerkraut
Dressing
- 1/4 cup olive oil
- Juice of two lemons
- 2 tbsp apple cider or white wine vinegar
- 1 tbsp maple syrup
- 3 cloves of garlic, grated or finely minced
- 1 tsp garlic powder
- 1/2 tsp celery seeds
- 1/4 cup fresh parsley or 2 tsp dried parsley
- 2 tbsp of hot antipasto or chillies in oil
- Large pinch of salt
- Cracked black pepper
Instructions
Cook the pasta an according to package directions.
Mix pasta with vegetables and dressing, chill.
