Pasta Salad

Ingredients

  • 1 lb rotini
  • 3 or more cups of thinly sliced vegetables such as bell peppers, red onions, celery, cucumbers, hearts of palm, spinach, olives, radish
  • 1/4 cup sauerkraut

Dressing

  • 1/4 cup olive oil
  • Juice of two lemons
  • 2 tbsp apple cider or white wine vinegar
  • 1 tbsp maple syrup
  • 3 cloves of garlic, grated or finely minced
  • 1 tsp garlic powder
  • 1/2 tsp celery seeds
  • 1/4 cup fresh parsley or 2 tsp dried parsley
  • 2 tbsp of hot antipasto or chillies in oil
  • Large pinch of salt
  • Cracked black pepper

Instructions

Cook the pasta an according to package directions.

Mix pasta with vegetables and dressing, chill.
