Christmas Carrots

Ingredients

2lbs of carrots, peeled and chopped

Vegetable stock

Sauce

4 cloves of garlic, minced

1 Tablespoon of ginger, minced or shredded

1 cinnamon stick or 1/2 tsp cinnamon powder

1/4 cup maple syrup

1/4 cup butter

1/2 cup vegetable broth

Directions

Bring carrots to boil in a large pot of lightly seasoned vegetable broth. Boil until you can pierce with a fork.

Melt butter in a small saucepan, and sauté garlic and ginger for 5 minutes, until fragrant.

Mix in cinnamon, vegetable broth and maple syrup and simmer the sauce while your carrots cook.

Drain the cooked carrots and return to the large pot. Pour sauce over the carrots, mix, and simmer for another 5 minutes or until the rest of your meal is ready
