Watermelon Lime Popcicles

I like my smoothies best when they’re frozen. This one’s toddler-tested and goes great with a book on the balcony.

Ingredients

  • 3 cups of fresh watermelon
  • 1/2 cup of berries (I used blueberries)
  • Juice of 2 limes
  • 6 or so strawberries, sliced

Directions

Use  the amounts above as a general proportion, adjust based on the capacity of your own freezer molds. I find that mine holds 3.5 cups of liquid to make  10 popcicles, so my recipes will always end up with  3.5 cups of liquid for 10 pops.

Add the watermelon, berries and lime juice to  a blender and blend until very well combined.

Drop the strawberry slices into your empty molds then pour the watermelon mixture to fill the space between the slices.

Put the molds into the freezer for about an hour, remove and add your sticks. If  you add them early then  they sink, sometimes.

Freeze for another 2 hours or until you’d like to enjoy your pops.

Keeps for many weeks in the freezer, if you can wait that long. I usually remove the popcicles from the mold and keep them individually wrapped in wax paper in bags.
