Avocado Pesto

Pesto is awesome, but pine nuts are pricey. This pesto keeps it smooth with avocado.

Ingredients

  • 35 grams of fresh basil
  • 10 grams of fresh parsley
  • 3 cloves of garlic, minced
  • 1 avocado
  • Juice of half a lemon
  • ¼ C extra-virgin olive oil
  • Salt and pepper

Directions

Finely mince the garlic. And tear basil and parsley leaves from the stems.

Add the garlic and avocado to a food processor. Combine until smooth. Add the basil and parsley next and continue blending. Slowly add the olive oil through the top spout as the blending continues. Add lemon, salt and pepper to taste.
